On Thursday, GM and I are going to spend a long weekend with his just-out-of-hospital-immuno-compromised brother. GM gets to play nursing assistant while I get to scrub the house, mow the lawn and make food.
I've trudged through the Food Safety class at Mission College, so I've got the basics down, but if anyone has advice on cooking for the elderly or immuno-compromised, I'd be glad to hear it. Any suggestions on foods I can leave in the freezer are double-helpful.

Nothing with a raw egg emulsfication, no sushi :-(

Date: 2009-04-27 08:53 pm (UTC)Freezer wise, I'd make sure everything is in single serving portions, and can be microwaved in a minute or two. Writing the cook time and what the food is in big letters on the package will also help further down the line. I think 'tv dinner' style with the veggies and entree in the same package might also be a good idea, as people will generally eat them if they're already there and heated, but are more likely to skip them if it means a second task.
