Last Sunday I organized a brunch at church. Mostly quiches and stuff like that, but the one winner this time was a low sugar (but not low fat!) version of Chocolate-Hazelnut Pots de Creme.

Chocolate-Hazelnut Pots de Creme
 
2/3 cup whole milk
1 egg (or 1/4 cup egg beaters if you’re worried about the egg)
2 tbsp Splenda (or real sugar if you want)
Pinch salt
1 cup (6 oz, about 2 bars) bittersweet or dark chocolate, chopped
2 tsp hazelnut extract (Next time, I'm going to use 2 TBL of Cointreau)
 
1. Use food processor or blender to chop chocolate into very small peices.
2. In a blender or food processor combine the egg, sugar, a pinch of salt, chopped chocolate, and extract/liqueur.
3. Heat the milk in microwave until it comes to a boil.
4. Run the processor or turn on the blender to a low setting. Pour in the boiling milk in a slow stream. The hot milk will cook the egg and melt the chocolate. Process or blend for 1 minute, until smooth. Spoon chocolate into four 4 oz ramekins or espresso cups and chill until firm.

I quadrupled this recipe with no problems. This seemed to chill sufficiently firmly that it might make solid little pieces using plastic candy molds.
I modified this recipe from NYAM who based it on this Rachael Ray recipe.

I think one of your fellow church goers would have licked the cup if no one had been looking. He did his best with the soup spoon he'd been given ;-) The nice man with the harrowing tale of squirrel eviction.

That was Simon. He's really nice, I've worked with him on clean-up days. His eldest son is one of the prettiest boys I've ever seen.
I can't wait untill we're on the no-carb part of this diet. I'm going to make those Pots de Creme again.

Not just him--everyone in the main hall did an excellent pre-clean.

Simon also records everything with a digital recorder when he's there. Lovely man!

I'll be on no-sugar/no-flour from 22 November until (at least) 13 December. The "normal" eating from 14 Dec until I do a second round of the diet next March/April. I will happily trade you another bottle of your favorite alcohol for a jar of lemon curd at 12th Night or the Crosston Dance Ball.
I've lost about 13 pounds in 17 days. The CrazyStupidDiet appears to be working. Yay!
